Whole Foods has these shrimp in their package deli section that are one of my "treat" foods. You know, the food you get when you want to treat yourself something special. I get the ones tossed with lime and cilantro, and feel good about the healthy choice and still feel like I'm getting something special. Of course, those shrimp are also not priced for daily (or weekly!) consumption... so I thought, why not make them at home?

Shrimp cooked in cilantro, lime, and spices.

Serves: 4   |    Total Time:


  • 1 pound shrimp, raw deveined and shelled
  • 1/4 cup lime juice
  • 1/4 extra virgin olive oil
  • 1/4 cup cilantro, minced
  • Dash of salt & pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon paprika, ground
  • 1/8 teaspoon cayenne, ground
  • 1/2 teaspoon cumin, ground
  • 1 tablespoon coconut oil


  1. Marinate the shrimp: Place the shrimp in a ziplock bag and add the olive oil, lime juice, cilantro, salt, pepper, paprika, cayenne, cumin, and minced garlic. Seal ziplock, and place in fridge for 6-8 hours.
  2. When ready to cook, heat coconut oil in a skillet over medium-high heat for 1 minute. Drain marinade from ziplock, and place shrimp in skillet. Cook for 2-3 minutes, tossing occasionally, until shrimp are pink and cooked through.
  3. Serve hot. Optional: sprinkle with additional cilantro as garnish.
