If you have a soft spot for homey-style food, it's time to get excited! Most "classic" American dishes are out of the question when you follow a Paleo diet or have allergies-- and if your soft spot for griddle cakes, grits, and chocolate chip blondies is big enough, just thinking about those treats with out giving in can require some major self control! But Jennifer Robins' new cookbook, Down South Paleo, makes eating those dishes not just healthier, but allergy friendly too!

There are a lot of reasons to love this cookbook, from big pictures to an easy to follow guide for what is grain, dairy, or nut-free, but I have to say, one of the things that astounded me the most about this book is the variety of recipes it has to offer. Craving a Dixie-Cajun dinner? Try Jennifer's Gulf Coast Fried Shrimp + Remoulade Sauce. More into the spicy flavors of Tex-Mex? Try the Gringo's Slow Cooker Tortilla Soup (really... try it!) or Lane Star Huevos Rancheros. What ever you choose, you are sure to finish feeling happily satisfied, and here is the real kicker-- not weighted down into a food coma.

It's true! I finished my Fried Eggs Benedict + "Cornbread" Waffles and actually felt energized! Not something I would have expected out of a Southern meal, but definitely a welcome result.

And since I have a soft spot for Chicken Tortilla soup, I knew right away that I'd be testing out Jennifer's recipe right after testing out the waffles. Let me tell you, I was not disappointed! Many Tortilla Soup recipes are thickened by corn masa (a type of corn flour) which add a richness that echoes the flavors of tortilla chips in every bite. Jennifer's version foregoes the corn masa, which lightened up the soup but in a refreshing, lick-smacking way. Sooooo happy to have leftovers!!
