Paleo Thin Mint Milkshake

The Girl Scouts will come for you soon. They came for me, they'll come for you. They'll be adorable, dressed in vests adorned with patches, and they'll bat their eyes and say, "Would you like to buy some Girl Scout Cookies?". You might be a lost cause already, and give in, or you might come up with your go-to excuse: I can't do gluten. They'll smile. "We have gluten-free! You can go on a cookie spree!" That's why I'm here: to give you one last (and totally delicious) excuse to say no (even though they are so darn cute). 

I was a cookie pushing Girl Scout myself for some time, and a Thin Mint loyalist through and through. Which is why this "milkshake" makes me so happy: It's a blended Thin Mint in a glass. It gives me the power to walk by tables of Girl Scout cookies untempted. It packs all the glory of your favorite Thin Mint cookie, in milkshake form. And hello! The milkshake part only makes it better. 

I used Sunwarrior® Warrior Chocolate Blend protein powder in this milkshake. I'm not huge on drinking smoothies--they spike my blood sugar, and leave me unsatisfied- but this protein powder is miraculously grain-free, dairy-free, and soy-free, which makes satisfying-paleo-smoothie-making easy. Ding! Coconut milk helps make this milkshake luscious and creamy, while adding healthy fats that keep me full. Now, when the Girl Scouts find you, you can shrug it off: your Thin Mint craving has been satisfied. 

Paleo Thin Mint Milkshake

1 banana, frozen

1 teaspoon cocoa powder

1/2 cup non-dairy beverage of choice (almond milk, coconut milk, etc)

1 packet (21g) Sunwarrior® Warrior Blend Chocolate protein powder

3 drops peppermint extract

1/4 cup full-fat canned coconut milk

8 ice cubes

Optional: cocoa nibs for garnish

 

1. Place all ingredients in a blender, and blend until smooth, creamy, and a bit foamy. Serve immediately. Garnish with cocoa nibs.
